Pernod is a spirit with notes of anise and plants, known for its freshness and complexity. Its aniseed note comes from the star anise and is combined with a bouquet of aromatic plants. Originally created in 1805, the recipe was reformulated in 1920 using distillates of star anise, fennel, and 14 aromatic plants.
